Ioannis Gerolymatos

Executive Chef

Chef Ioannis’ love for the kitchen began at a very young age in his hometown: Athens, Greece. Inspired by the ambrosia that is the Mediterranean flavours and tastes of local produce, today Ioannis showcases delicious yet simple dishes that are inspired by his heritage and culinary journey, which have taken him from Greece to France, Switzerland, Africa, the United States and Canada.

Ioannis is inspired by how food has the ability to tell a story about culture while bringing people together. His years of culinary experience, coupled with his achievement of his Bachelor of Arts degree with honours in Culinary Management has allowed Ioannis to develop the discipline of complex culinary preparations and presentations.

Ioannis’ heritage, education and love for food have come full circle as Executive Chef of the Greek inspired Mediterranean concept of Hydra Estiatorio. As an energetic culinary professional, Ioannis is the mastermind behind recipe development, where his culinary style will combine traditional and progressive techniques, ideas and presentations from his past experiences with new cuisines from around the world. Hydra Estiatorio is committed to sourcing seasonal, sustainable produce that shines a light on the true stars in the culinary world: the ingredients.

Claire Wright

General Manager

Claire began her career in the hospitality industry the moment she was invited in to it, within multiple establishments in both Victoria and Vancouver. She holds a degree in Education specializing in learning and behavioural difficulties. However, once the degree was complete and it was time for a ‘real job’, she simply couldn’t shake her passion for restaurants.

Upon returning from traveling to Australia and beyond, Claire joined the famous Glowbal Restaurant Group. It was with GRG that Claire truly honed her skills as Boss Lady, working her way through each restaurant in the group during the decade that she was a part of the GRG family.

After a brief hiatus to have her brilliant son, Jack Danger; Claire is back on the Vancouver restaurant scene with Executive Hotel Group. She feels very privileged to be granted the honour of opening this Mediterranean gem in the heart of Vancouver. She is truly excited to give the people of Vancouver a warm and inviting second home where they can get away from it all, right here in the middle of downtown.

Claire Wright is a General Manager who prides herself on working side by side with her team to provide a unique and comfortable dining experience in her restaurants.

TIMING

The average dining experience ranges from 90 minutes for smaller groups to up to 2 hours for larger parties. Please contact our Events team if you are interested in an extended experience.
